Cycled 38 miles
Our last day of cycling on this tour. It was a perfect day and a wonderful tour through the countryside of Vermont. We even got to see a tree filled with fall color – at last.

The first treat of the day came at mile 22 when we were all invited to Carol’s house for cookies. She is a tandem rider who is a friend of our guides and who happens to live right on today’s route. She invited us to stop by her house for cookies.

The apple pecan brownies were amazing. Even the oranges were the best.
Then at mile 35 we passed by Browns River Bridge, no longer in use but very fun to check out.

Back at the Essex we found a nice shady spot to have a beer and disassemble the bike.

A few hours later we all gathered to take a cooking class where we prepared and cooked our own dinners. This was a very fun and delicious experience.
The Prep Tables

The result – our dinner: Fresh made pasta and Creamy Chicken Piccata. Plus a Charred Tomatoes with Bell Peppers and Mozzarella Salad.

And for dessert – Lemon Ricotta Cake! All prepared by us within about a two hour class. A very fun and different way to celebrate the end of a great bicycle tour.
Tomorrow it’s back to Boston and a flight out at 7am on Saturday morning.
